A delicious way to eat your dark leafy greens
1 Bunch swiss chard, stems removed & chopped
1 cup frozen chopped onion
1/2 red capsicum
1 Tsp fennel seeds
1/2 Tsp chilli flakes
1 Tbsp salt reduced vegetable stock
In a dry non stick pan on medium heat toast the fennel seeds until you can smell their aroma, add the onions, capsicum & chilli flakes & sauté` until their is a little colour on the onion. Add the swiss chard to the pan and toss through with the stock, put a lid on for 5 mins & serve.
